Braised preserved vegetables with pork belly. It's one I could eat all day.......The pork belly is basically unsmoked bacon that's been braised with the vegetables in sweet soy sauce.

Well, you have to pick a good restaurant somewhere near the ocean usually (or in a big sophisticated inland city) - but I adore squid deep fried and then tossed in rock-salt and coarse (or hot red) pepper.

Depands on how fancy, if its a buffet then whatever, if its takeout then I like low mein and white rice. For a fancy place, mango bubble tea, spring roll and clay pot meal.

Always ask the server. Ask them what their favorite is and what most people would have in China and what is the most authentic.

For authentic Chinese dishes, visit your local China town or Far East Center. Here's a list of the dishes that we, Chinese, eat (none of these are Westernized though):

Cantonese Roast Duck (廣東'鴨)
Cantonese Roast Pork (廣東'肉)
BBQ Pork (叉')
Steamed BBQ Pork Buns (aka Cha Siu Bao = 叉'
